Mexican- Style  Eggplant Casserole

 

Directions:

Preheat the oven to 450 degrees.

Spray baking sheet with oil and place eggplant slices on it in a single layer. Spray the tops of the eggplant with oil. Bake until soft when pressed for about 15-25 minutes.

Meanwhile , in a small pot, add your oil, sauté your onion, celery, for 3 minutes, combine tomato sauce, chilies, green  onions, cumin, garlic powder, salt, black pepper, chili powder and olives. Bring to a simmer, then simmer, uncovered, over medium-low heat for 10 minutes.

Turn the oven down to 350 when the eggplant is done add your chopped cilantro.
